Classic truffle recipe: Delicious Truffled Mushroom Risotto

– 1 tbsp Truffle Hill Australian Black Truffle Oil
– 1 cup Arborio rice
– 4 cups vegetable or chicken broth
– 1 cup finely chopped onion
– 2 cups sliced mushrooms
– 1/2 cup grated Parmesan cheese
– Salt and pepper to taste

1. In a large saucepan, heat the truffle oil over medium heat. Add the onion and saute until softened, about 5 minutes.
2. Add the Arborio rice and cook, stirring constantly, for 2 minutes.
3. Gradually add the broth, one cup at a time, stirring constantly and allowing the liquid to be absorbed before adding more.
4. Stir in the mushrooms and continue to cook until the rice is tender and creamy.
5. Remove from heat and stir in the Parmesan cheese. Season with salt and pepper to taste.
