Filet Mignon with Truffle Paste Butter

  • 2 eye fillet steaks (around 180–200g each)
  • Salt and cracked black pepper
  • Olive oil, for searing
  • 2 tbsp unsalted butter (softened)
  • 1 tsp Truffle Hill Truffle Paste
  1. In a small bowl, mix the softened butter with truffle paste. Spoon onto baking paper, roll into a log, and chill in the fridge until firm.
  2. Bring steaks to room temperature. Pat dry and season generously with salt and pepper.
  3. Heat a pan over high heat with a splash of olive oil. Sear steaks for 2–3 minutes per side (or until cooked to your liking).
  4. Rest steaks for 5 minutes. While resting, slice medallions of the truffle butter.
  5. Top each steak with a slice of truffle butter before serving. Let it melt over the meat and serve immediately.
